Lagos roots
Every Sunday in Lagos started the same way: a pot on the fire before anyone was properly awake. Tomatoes, peppers, and onions blended down, then fried until the oil turned red and the whole street felt invited.
The jollof sat on the flame until the rice at the bottom caught and smoked — the part everyone fights over. Spice was never a garnish. It was the point. And the crowd always came back for a second plate.
